about five years ago i read that book skinny bitch and promptly became a vegan. i learned to make this tuscan specialty during that era and though I’ve gone back to NY strips and burgers cooked rare I still make it all the time.
you need:
olive oil
4 cloves garlic, crushed
2 cans of white cannellini beans
1 cup vegetable broth
1 big can of chopped tomatoes
salt, pepper, a bay leaf, crushed red pepper (i like it spicy)
grated parmesan & chopped fresh basil
In a heavy pot heat the oil and brown the garlic on low for about 5 minutes or more as long as it’s not burning. Add the beans, broth, tomatoes and spices. Bring to a boil over high heat then turn it down and simmer for 40 minutes. Season it again to taste. Serve with parmesan and chopped fresh basil on top. x
